Dozens of the world’s top experts studying the atomic make-up of food are in Sydney to attend the Neutrons and Food workshop, hosted by the Australian Nuclear Science and Technology Organisation (ANSTO) from 31 October to 3 November.
Monday highlights include:
- Welcome by Dr Adi Paterson, CEO, ANSTO.
- Overview of the future of food science - Dr Peter Lillford (University of York) and Dr Elliot Gilbert (ANSTO).
- Dairy foods including understanding milk at the molecular level.
- Lipids and fats including nanotechnology and neutraceuticals.
