Next week, the first ANSTO/CSIRO collaborative study into the atomic structure of foods will be launched, paving the way to understanding how food is processed and formed to ultimately help improve food safety, quality and nutrition.
The partnership will bring together ANSTO’s sophisticated capabilities in understanding material structures with CSIRO’s research initiatives through its Food Futures and Preventative Health Flagships and Food Science Australia (FSA) – a joint venture of CSIRO and the Victorian Government. A special agreement will be signed by ANSTO, CSIRO and FSA to formalise the alliance.
Initial projects will study the structure of starch in relation to its long-term nutritional benefits in potentially reducing the risk of colo-rectal cancer and the incidence of diabetes, both major public health concerns and a developing risk for Australians.
